I was inspired by some food posts I had seen of sweet potatoes being used as the "bread" in an open face type of sandwich. They were sliced lengthwise to create flat surfaces for toppings. I bought a sweet potato then never got around to using it for that.
The sweet potato started getting impatient with me and I got on its last nerve because it was waiting so long. It started growing a branch. Lol! So I wanted to make something quick and easy with it. I found a recipe for sweet potato fries online and it turned out great.
You just cut it up, toss it up with oil and seasonings, and air fry for 20 minutes at 380 degrees. The texture came out like potato wedges, with just a tad bit of crispiness. Here is the link to the original recipe: https://www.apinchofhealthy.com/air-fryer-sweet-potato-fries/
