I made a cabbage soup and had some extra cabbage and carrots. I would've used them all up if they fit in my slow cooker, but they didn't. So I decided to make something else with it and I found this apple cider vinegar paleo coleslaw recipe. Someone once told me that cabbage has more nutrients than lettuce. I didn't believe it, but I googled it and it's true!
