Steak with chimichurri sauce, sweet potatoes, and sprouted lentils

 


I’m not good at cooking steak. I don’t even remember what type of steak cut I used in this recipe. I googled what types of meat were good for grilling and picked one of those.

The chimichurri sauce with the steak is sooo yummy. I got it from the whole 30 cookbook. For whatever reason, the recipe online is different when you google it. I forgot to buy shallots and more lime juice but it still turned out delicious. Here’s what I went with.

Ingredients:

1-1/2 cups olive oil

1/4 cup red wine vinegar

1/8 c lime juice 

3-4 cloves garlic, chopped

1/2 teaspoon cracked black pepper

1/2 teaspoon salt

1 bunch cilantro

Blend all ingredients together until all leaves chopped up. Spoon over grilled meat. Yum!

I listened to a health podcast that talked about the many health benefits of sprouted lentils. I’ve grown them several times, tried different dressings with them raw as a salad and also cooked. Burrata Sandwich


I had seen the Burrata cheese online and wanted to give it a try. I baked up some bread and put it together as an open face sandwich. It’s like a giant fresh mozzarella ball on the outside with a very soft inside as if they stopped the cheese from developing harder on purpose. It was delicious and I would definitely make it again.

Here’s how I made it.

Ingredients for bread:

  • 2 cups all purpose flour 
  • 1/4 teaspoon salt
  • 1 teaspoon instant yeast 
  • 1 cup water
  • Olive oil (for bowl)
Instructions for bread:

  1. In a bowl, add flour, salt, and yeast. Whisk together.
  2. Add water and mix well, scraping sides of bowl.
  3. Add oil to sides of bowl. This is so it doesn’t stick when rising. Cover with plastic wrap, then a towel. Set aside to rise for an hour.
  4. Oil your bread pan, transfer dough to it, and rise uncovered for half an hour.
  5. Airfry at 400 for 20 minutes.
Ingredients for sandwiches:
  • Bread, sliced
  • Tomatoes, sliced
  • Burrata cheese
  • Basil leaves, sliced
  • Olive oil
  • Fresh, ground black pepper 
To assemble open face sandwiches:
  1. Prepare your ingredients as listed above (slice). You can also toast your bread if you’d prefer a crunch.
  2. Layer ingredients starting with bread, then tomato, Burrata cheese, and basil leaves.
  3. Drizzle olive oil on top and crack some black pepper over.
  4. Enjoy!

Green Thai Curry with Shrimp & Veggies

 

My buddy got back from a trip to Thailand and brought me back some green Thai curry paste. I decided to cook it up with some veggies and shrimp.

The authentic recipe would use their style of ingredients like rock sugar. But this is my version. Here’s what I did.

Ingredients:

  • 1 packet Thai green curry paste
  • 1 lb shrimp with heads and shells
  • 1 can coconut milk
  • 1 zucchini, cut into bite-size pieces
  • About 15 Thai basil leaves
  • 2 blocks fried tofu, cut into bite-size pieces
  • 1 cup water
  • 1 Tablespoon fish sauce
  • 3 teaspoons sugar
Instructions:
  1. Rinse veggies and shrimp.
  2. Prepare vegetables as described above (cut, pull off branches)
  3. Add curry paste to heated pot.
  4. Add coconut milk, stir together well, and bring to boil.
  5. Add shrimp and water and cook until they change color.
  6. Add veggies and stir through to cook.
  7. Add fish sauce and sugar to balance out flavors.
  8. Serve with white rice.
  9. Enjoy!
