My buddy got back from a trip to Thailand and brought me back some green Thai curry paste. I decided to cook it up with some veggies and shrimp.
The authentic recipe would use their style of ingredients like rock sugar. But this is my version. Here’s what I did.
Ingredients:
- 1 packet Thai green curry paste
- 1 lb shrimp with heads and shells
- 1 can coconut milk
- 1 zucchini, cut into bite-size pieces
- About 15 Thai basil leaves
- 2 blocks fried tofu, cut into bite-size pieces
- 1 cup water
- 1 Tablespoon fish sauce
- 3 teaspoons sugar
Instructions:
- Rinse veggies and shrimp.
- Prepare vegetables as described above (cut, pull off branches)
- Add curry paste to heated pot.
- Add coconut milk, stir together well, and bring to boil.
- Add shrimp and water and cook until they change color.
- Add veggies and stir through to cook.
- Add fish sauce and sugar to balance out flavors.
- Serve with white rice.
- Enjoy!
